When recording with the x264 codec at 1080p60fps, the in game fps stays quite high, well above 60, while the disk write fps dips to as low as 40 at some points. Normally, it stays around the 58-62 range.
When recording at 120 fps, the dipping goes as low as 80fps, but still stays above 60 which is what I think I want.
Something important that I add is that I'm using Single Pass - Bitrate based (ABR) set at 100,000 kbit/sec since my HDD is benchmarked by Dxtory at 105 MB/sec. (In my mind, these two things are somewhat codependent) The majority of people seem to use one of the other Single Pass options.

I include it because I think I should be able to use whatever CPU intensive settings I can in order to make it easier on my (single) HDD's poor write speed.

As for the video fps drop, most people fix that by using the "force CPU Processing" in advanced tab
Just curious, but did you set those settings in x264 intentionally or have you been tinkering with them ? Right now you've set it up to be almost lossless with low cpu hit, but large file size.

If the HDD is too slow, try Lagarith.
