Minecraft - x264 - Not 1080p

Hello! I have been recently having issues with DxTory/Windows Media Player (WMP). I am using the x264 codec to record Minecraft at 1920x1080 (1080p), and I press F11 on Minecraft before recording, which makes it full screen - as my screen is exactly 1920x1080 (1080p). When I view the video in any program in full screen, it is most definitely not 1080p, as the edges of things are pixelated. I am not sure if this is just simply because of how x264 has to trade-off some quality for an extremely small file size, or if I am just hallucinating the low quality. When I make the player window go down to about 1280x720, it does appear to be 720p, which is fine, but when I upload the video to YouTube, the quality will drop significantly.

I guess the overall questions are:

1. How can I get the maximum quality for the video, and yet keep the file size small?
2. Is there a free program I can use to render a high quality video with a big file to a small file with little to no quality loss?

first off, your x264 settings might be set to produce small file. small file -> low image quality, no to ways around that :)
That might explain why your recording looks "lower resolution", the compression artifacts get more and more unnoticeable if you scale the video smaller in video player.
And youtube compresses your videos even further, so I'd advice uploading as high quality (aka. big) file as possible.
So generally I'd suggest avoid encoding/rendering already lossy material as it only gets *much* worse.

if you want better image quality, use lossless codecs (lagarith, ut video codec) or switch x264 to lossless / raise your quality settings by alot.

and for rendering: virtualdub is pretty handy, though I don't think it can handle multiple audio tracks.
